Raw vegan Ice Cream

This weekend was my first attempt to make raw, vegan ice cream.  It was simple and easy, and it turned out really good.  I combined two recipes, to accommodate the ingredients I had available.

Here are the two recipes I used:

Vegan Cashew Banana Ice Cream

Ingredients: 
2 cups raw cashews soaked for 2 hours
1 cup filtered water
3 large really ripe organic bananas
1/4 cup agave or “Just Like Sugar”
1 Tbsp natural vanilla extract
pinch of Celtic sea salt



Maple Pecan Ice Cream


Ingredients:

Here's what I did:

  • 2 cups raw cashews soaked for 2 hours
  • 3 large really ripe organic bananas
  • 1/2 cup maple syrup
  • 1 Tbsp natural vanilla extract
  • pinch of Celtic sea salt
  • 1/2 cup dark  nectar
  • 1 tsp  extract
  • 1 tbsp ground cinammon
  • 1 cup , chopped (optional)
Blend everything in the food processor, then mix in the chopped pecans.  Freeze.
