Raw vegan corn chips. Success.

Bought a food dehydrator for $60. Definitely not the mac daddy Excalibur, but you can't always get what you want!

These turned out really good. Husband, niece, and mother in law approved. Great with guacamole and salsa, duh! 

Plus, they are a whopping 9.5 calories each. Regular tortilla chips are similar in their overall calories, but don't have the nutrients that raw food does. Being that these are raw, they don't make you feel tired at all.... And about 5 or 6 of them with salsa or guac actually makes you feel very full because of the low calorie density (unlike junky chips, that takes half a bag to satiate your hunger).

4 ears corn (3 cups yellow corn)
1 red pepper (I would have used yellow but the store didn't have any organics) 
1/8 cup onion (totally optional)
1 cup flax
Cumin
Salt
Cilantro

Purée everything then add the flax at the end, and briefly pulse but don't destroy the texture of the flax too badly. Then spread on parchment sheets in dehydrator trays, thin layers. Dehydrate at 105 until dry, but not crispy. Use a pizza roller and cut into triangles, then replace into dehydrator until super dry and crispy. Store in air tight container.
