This is my favorite breakfast for the month of June, when my black raspberries are fresh out of the yard.
1. Cook a pouch of organic, maple and brown sugar oatmeal. Divide in half. You will use 1/2 today, and then the other half tomorrow! 1/2 pouch = 80 calories.
2. Wash and toss 1 cup of black raspberries into the bowl. (you can also reduce to 1/2 cup... because 1 whole cup of berries is pretty gluttonous, but I really don't care. It's delicious.) You can substitute other berries too (blackberries, blueberries, strawberries). 1 cup = approx. 60 calories.
3. Measure out and dump in 1/2 cup of coconut milk (or whatever you have, soy, rice, almond). I used unsweetened, so-delicious coconut milk, which is 50 calories per cup. 1/2 cup = 25 calories.
4. Mix it all up. Smash some of your berries to release the flavor into the coconut milk.
5. Scarf.
Total calories = 165.
If using only 1/2 cup of berries, total calories = 135.
Raspberries are considered a "super food". They are one of the highest fiber foods you can find, and are extremely rich in antioxidants, vitamins, and essential acids. They also contain protein (what?!) and minerals.
